Tasty Tuna Pasta Bake

Tasty Tuna Pasta Bake is a nutritious well balanced dish that will feed between 2/3 little children. It can be prepared in advance and then either cooked in the oven or frozen to be used at a later date.

Tasty Tuna Pasta Bake Recipe for Busy MumsI have added fresh peas to this recipe as they are perfectly in season now, but you can add any pre-cooked vegetable of your choice or throw in some frozen sweetcorn. The choice is yours!

Tasty Tuna Pasta Bake

  • Equipment: 1 small ovenware dish
  • Makes 2/3 portions for little children
  • Prep Time: 20 minutes
  • Cooking Time: 20 minutes
  • Freezes well

Ingredients

100g mini shell pasta
2 tbsp olive oil
1 clove garlic finely chopped
1x 454g chopped tinned tomatoes
1 tsp sugar
1 tin tuna
½ pkt peas in their pods  blanched for 2 minutes or a large handful of cooked frozen petit pois
½ ball mozzarella torn into small pieces
Grated parmesan (optional)

Method

Pre-heat oven to 190 degrees and begin by making the simple tomato sauce.

  1. Tip the olive oil in a saucepan and add the chopped garlic. Fry for a couple of minutes until the garlic is beginning to turn golden brown.
  2. Add the chopped tomatoes and the sugar as well as a small amount of salt (optional). Let the sauce simmer away for 10 minutes.
  3. While it is cooking, put the water on to boil for the pasta shells and then cook the pasta according to packet instructions. For the last couple of minutes you could add in the peas to the pasta water to save another saucepan being used.
  4. When the sauce has had about 10 minutes simmering time, turn off the heat. Drain the pasta ( and peas) when it is cooked and add it to the tomato sauce. Next, add in the tinned tuna.
  5. Tip the mixture in to your chosen oven dish.
  6. Tear over the mozzarella cheese and grate some parmesan too if you like the flavour.
  7. Bake in the oven for 25/30 mins.

Serve with some other cooked vegetables of your choice , chopped up tomato and cucumber or some garlic bread.
