Mini rhubarb and orange pies

Mini pies are the latest baking craze it seems, they are starting to invade cooking blogs and food boards in Pinterest.

Those individual treats are  indeed very attractive yet easy to make, and nice to bake with children; all you need to make them is a muffin tray.

Mini rhubarb and orange pies

Preparation: 1 hour
Baking: 40 minutes at 200C
Makes: 12 pies


  • 250 gr. whole wheat flour
  • 100 ml. rapeseed oil
  • 100 ml. hot water
  • 2 tbsp. sesame seeds
  • 1 tbsp. honey


  • 25 gr. butter
  • 3 sticks rhubarb
  • 1 orange zest
  • 1/2 cup icing sugar + extra for icing
  • 1 handful of raisins
  • 1 tsp. ground ginger
  • 1/2 tsp. cinnamon


  1. Slice the rhubarb. In a bowl, marinate it with the sugar, spices, raisins and orange zest, for an hour in the fridge.
  2. Prepare the pastry: put all the ingredients in a big bowl. Knead the pastry quickly and make a ball of it. Let it rest for an hour.
  3. Oil the muffin dish. Spread the pastry and cut circles that are slightly bigger than the muffin holes. Shape the pastry into each hole. Prepare the lid.
  4. Pre-heat the oven.
  5. Take the marinated fruit out of the fridge and remove the extra liquid. Place the mix in the pastry holes and fill them up.
  6. Add a small dice of butter on top. Cover with the lids and seal.
  7. Make an small incision on each pie. Bake for 40 minutes or until pastry is golden.

Let the pies cool down. Sprinkle the icing sugar on top and serve with ice cream or with yoghurt sweetened with honey.
